BAULI GROUP INVESTS IN THE FUTURE: BAULI PATISSERIE ACADEMY LAUNCHED IN COOPERATION WITH CAST ALIMENTI

An investment in future talent: Bauli Group kicks off a training initiative with CAST Alimenti for students and employees

Verona, 15 January 2024Bauli Group invests in talent and sets in motion the new Bauli Patisserie Academy training initiative in cooperation with CAST Alimenti, the Italian School of Culinary Arts.

The aim of the course is to train professionals specialising in patisserie techniques, with the opportunity at the end of the programme to join Bauli Group as part of the newly formed Bauli Patisserie Team of expert patisserie chefs, who will bring the skills they have learned to the R&D team and the network of “Minuto Bauli” sales outlets, where consumers can sample freshly baked products.

Bauli Group will also finance the Bauli Patisserie Academy, so the course will be offered free of charge to all participants. This is an investment both in future talent for potential recruitment into the workforce, as well as in the talent already employed by the Group: four of the twelve students on the course will in fact be Bauli Group employees, with the aim of cultivating in-house the haute patisserie skills that are crucial for the company’s growth and the continuous improvement of the products it develops.

Our goal is to create a generation of patisserie chefs with advanced skills who can stand out in an increasingly competitive and selective market. And we will be the first to stake claim to these young talents by selecting those who are the best fit for recruitment into our Bauli Patisserie Team. So, here’s a warm welcome to the Bauli Patisserie Academy trainees!”

CAST Alimenti Director Vittorio Santoro commented on the value and significance of the partnership with Bauli Group by saying: “This collaboration points up our ongoing, qualified dialogue with major companies, in synergy with our work in the area of artisan businesses. CAST trains both master patisserie chefs as well as qualified personnel for leading confectionery companies. Our courses open up new professional opportunities. Entering the food industry allows us to explore specific aspects of the profession such as R&D, innovative applications of raw materials, and the development of new products. This dynamic and varied work, which also involves travel and learning about new markets, is a little-known but far-reaching aspect of the profession of patisserie chef. The fact that Bauli Group has chosen CAST to implement the Academy project is not only a source of pride for us as a school, but also lets us offer our students even more real-world job opportunities.”

Turning to the course structure and its operation in practice, the 12-week training programme starts in March and will be organised in a series of modules, each focusing on a patisserie technique that underpins the success and excellence of Bauli Group, from the preparation of sourdough to water and fat-based creams, and from chocolate tempering, shortcrust pastry and whipped materials right through to gluten and lactose-free products.
